R\u00f6dvinss\u00e5s brukar vi annars g\u00f6ra till ny\u00e5r och r\u00e4tten passar ju bra \u00e4ven d\u00e5. Vanligtvis brukar jag ha kalvfond i r\u00f6dvinss\u00e5sen men till den h\u00e4r anv\u00e4nde jag lika delar brynt schalottenl\u00f6ks- samt gr\u00f6nsaksfond fr\u00e5n Bong. Det gav en superfin smak till r\u00f6dvinss\u00e5sen. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/allergisidan.nu\/recept\/wp-content\/uploads\/2023\/02\/4494D8C7-E778-49D0-84FB-1F5FC3EEC124-768x1024-1.jpeg\" alt=\"\" class=\"wp-image-2686\"\/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">B\u00f6nbiffar:<\/h4>\n\n\n\n<p>2 f\u00f6rp f\u00e4rdigkokta kidneyb\u00f6nor (avrunnen vikt ca 450 g)<br>4 msk b\u00f6nspad<br>1,5 dl havregryn<br>0,5 tsk salt<br>1 gul l\u00f6k<br>2 vitl\u00f6ksklyftor<br>1 msk paprikapulver<br>1 krm cayennepeppar<br>1 msk <a href=\"https:\/\/www.apotea.se\/renee-voltaire-coconut-aminos-250-ml\">coconut aminos<\/a> (ist\u00e4llet f\u00f6r soja) Kan uteslutas.<br>2 msk rapsolja att steka i<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>L\u00e5t b\u00f6norna rinna av, spara 4 msk av b\u00f6nspadet. <\/li>\n\n\n\n<li>Mosa eller mixa b\u00f6norna, det beh\u00f6ver inte bli en helt sl\u00e4t smet. <\/li>\n\n\n\n<li>Finhacka l\u00f6ken och vitl\u00f6ken och stek p\u00e5 medelv\u00e4rme tills den \u00e4r mjuk (det g\u00e5r \u00e4ven att mixa ner r\u00e5 tillsammans med havregrynen).<\/li>\n\n\n\n<li>Mixa havregrynen till ett grovt mj\u00f6l. Blanda ner l\u00f6k, b\u00f6nspad och kryddorna och mixa ihop.<\/li>\n\n\n\n<li>Blanda havregrynssmeten med b\u00f6norna.<\/li>\n\n\n\n<li>Forma till 8 biffar. Stek biffarna ca 3 min p\u00e5 varje sida i olja tills de f\u00e5tt fin f\u00e4rg.<\/li>\n<\/ol>\n\n\n\n<p><strong>Hasselbackspotatis:<\/strong><br>12 fasta potatisar <br>30g mj\u00f6lk- och sojafritt margarin<br>1 tsk flingsalt<br>1 msk str\u00f6br\u00f6d (kolla inneh\u00e5ll!)<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>S\u00e4tt ugnen p\u00e5 225 grader.<\/li>\n\n\n\n<li>Skala potatisen. <\/li>\n\n\n\n<li>Sk\u00e4r tunna sk\u00e5ror i potatisen. L\u00e4gg potatisen i en sked eller slev s\u00e5 f\u00f6rhindrar du att kniven g\u00e5r hela v\u00e4gen. <\/li>\n\n\n\n<li>L\u00e4gg potatisen i en ugnsfast form med sk\u00e5rorna upp\u00e5t.<\/li>\n\n\n\n<li>Sm\u00e4lt margarinet. Pensla potatisen med margarinet och str\u00f6 p\u00e5 flingsalt.<\/li>\n\n\n\n<li>St\u00e4ll in potatisen i den mellersta delen av ugnen. <\/li>\n\n\n\n<li>Ta ut potatisen efter 3o minuter och pensla den med mer sm\u00e4lt margarin, str\u00f6 p\u00e5 str\u00f6br\u00f6d. <\/li>\n\n\n\n<li>St\u00e4ll in i ugnen igen i ca 15-20 minuter. <\/li>\n\n\n\n<li>K\u00e4nn p\u00e5 potatisen med en sticka, g\u00e5r den med l\u00e4tthet igenom \u00e4r den klar.<\/li>\n<\/ol>\n\n\n\n<p><strong>R\u00f6dvinss\u00e5s:<\/strong><br>2 schalottenl\u00f6kar<br>1 morot<br>1 lagerblad<br>N\u00e5gra kvistar timjan (det fungerar med torkad timjan ocks\u00e5).<br>4 dl mustigt r\u00f6dvin<br>3 dl vatten<br>1,5 msk koncentrerad <a href=\"https:\/\/bongtouchoftaste.se\/produkter\/gronsaksfond\/\">gr\u00f6nsaksfond<\/a> (kolla inneh\u00e5ll, jag anv\u00e4nde Bongs). <br>1,5 msk koncentrerad <a href=\"https:\/\/bongtouchoftaste.se\/produkter\/brynt-schalottenlokfond\/\">brynt schalottenl\u00f6ksfond<\/a> (kolla inneh\u00e5ll, jag anv\u00e4nde Bongs)<br>1 msk r\u00f6dvinsvin\u00e4ger<br>2 msk mj\u00f6lk- och sojafritt margarin<br>Smaka av med salt och peppar om det beh\u00f6vs.<\/p>\n\n\n\n<p><strong>Redning till s\u00e5sen:<\/strong><br>1 msk majsst\u00e4rkelse<br>1 msk kallt vatten<\/p>\n\n\n\n<p>1. Hacka l\u00f6ken och moroten. Fr\u00e4s i en klick margarin i n\u00e5gra minuter s\u00e5 de f\u00e5r lite f\u00e4rg.<br>2. H\u00e4ll p\u00e5 vinet, l\u00e4gg i timjankvistarna och lagerbladet.<br>3. L\u00e5t koka p\u00e5 medelv\u00e4rme utan lock tills vinet har reducerat s\u00e5 det \u00e4r ca tv\u00e5 tredjedelar kvar. Det ska bli lite simmigt.<br>4. H\u00e4ll p\u00e5 vattnet och fonden. L\u00e5t puttra ca 10-15 minuter.<br>5.  Sila av gr\u00f6nsakerna. Jag brukar trycka gr\u00f6nsakerna mot silen (och skrapa ner det som kommer ut fr\u00e5n undersidan ner i s\u00e5sen) s\u00e5 f\u00e5r man i lite av gr\u00f6nsakerna och s\u00e5 reds s\u00e5sen lite grann.<br>6. Smaka av med salt och peppar om det beh\u00f6vs. Beh\u00f6ver du h\u00f6ja syran i s\u00e5sen tills\u00e4tter du en skv\u00e4tt r\u00f6dvinsvin\u00e4ger.<br>7. Red av s\u00e5sen med 1 msk majsst\u00e4rkelse utr\u00f6rt i 1 msk kallt vatten. H\u00e4ll redningen i s\u00e5sen, l\u00e5t koka upp och puttra n\u00e5gon minut.<br>7.
